Healthy Chicken and Vegetable Sandwich Recipe

- 350 g Chicken Breast (Sliced for Stir-Fry).
- 6 Sandwich bread (whole grain).
- 1 Chopped Scallion.
- ½ tsp Dried Garlic
- 2 tbsp Olive oil
- ½ cup Sliced Mix (Red and Yellow bell peppers)
- 1 tbsp Chopped Parsley
- 40g Sliced Green Olives
- ½ tsp Salt
- 1 pinch Black Pepper
- ¼ tsp Paprika powder
- 1 tsp Cumin Powder
- ¼ tsp Chili Powder
- ¼ tsp Turmeric (curcumin)Powder
- 2 pinches Oregano
- 1 tbsp Greek Yogurt 0%
- 1tsp Lemon juice
- ¼ cup Grated cheese (any cheese you have)
- 4 lettuce leaves
1.Add olive oil and chopped scallion in a large skillet or wok over medium-high heat. Stir for 1 minute.
2.Add garlic, the bell peppers, cumin powder, black pepper, chili powder, paprika powder, turmeric powder, salt, Stir, cover and let cook for 5 minutes.
3.In a bowl add chicken, yogurt, oregano, lemon juice. Mix everything together.
4.Add the chicken mixture to the bell peppers, then add the parsley and olives. Stir well, cover and let cook for 15 minutes.
5.Let cool then add the cheese, mix well.
6.Open the bread sandwich. Place 1 leaf of lettuce, if the lettuce leaves are much larger than the sandwich, cut them into halves or thirds first. Then add the chicken and vegetable mixture.
7.Microwave for 1 minute.
