Homemade Vegetable Soup Recipe

 

This homemade vegetable soup is a simple healthy and delicious soup recipe that’s packed with vitamins and nutrients, you’ll definitely want to add to your dinner or lunch rotation. It’s quick and easy to make.

Cook time: 20 mins
Total time: 30 mins

Ingredients:

 

  • 1 stalk celery
  • 2 medium carrots
  • 1 big potato
  • 1 zucchini
  • 1 scallion
  • 4 parsley sprig
  • 1L water
  • Parmesan cheese
  • Toasted bread
  • 2 tbsp olive oil
  • ¼ tsp black pepper
  • ½ tsp salt

Instructions

 

1. Rinse all the veggies.

2. Peel the carrot and potatoes, cut into a few big pieces.

3. Cut the zucchini into a few big pieces.

 4. Cut the stalk of celery into few pieces.

5. Rinse all the veggies again after you cut them. (don’t forget the parsley)

6. Put all the veggies in a big pot add the water, salt, pepper, olive oil.

7. Cook for 20/25 minutes.

8. Blend until smooth.

9. Serve with some parmesan cheese and toasted bread.
